Ingredients:

  • 1 bunch of hibiscus
  • 1 water glass of İpek coarse bulgur
  • 1 large onion
  • 2 tablespoons of tomato paste
  • 2 tablespoons of olive oil
  • 1 teaspoon of chili powder
  • Salt
  • Black pepper
  • 2 cups of water or vegetable broth

Preparation:

Finely chop the onion. Remove the leaves from the hibiscus and wash thoroughly with plenty of water. Heat the olive oil in a large skillet. Add the chopped onion and fry until soft. After the onions are softened, add the tomato paste and continue sautéing until it becomes fragrant. Then, add the washed bulgur and sauté for a few minutes. Add salt, black pepper, and chili powder, and mix. Add 2 cups of water or vegetable broth. Once it starts to boil, reduce the heat and cook until the bulgur absorbs the liquid. This may take about 15-20 minutes. While the bulgur is cooking, put the hibiscus leaves in a pot or large bowl and blanch them for 1-2 minutes by pouring boiling water over them. Rinse the boiled hibiscus leaves with cold water and drain. Add the boiled hibiscus leaves to the cooked bulgur, mix, and remove from the heat. Hibiscus with bulgur is ready to serve. You can serve it with an optional squeeze of lemon. Bon Appetit!
