Ingredients:

  • 1 cup İpek coarse bulgur
  • 1 cup barley noodles
  • 1 tomato
  • 2-3 green onions or chives
  • ½ cup feta cheese
  • 1 cup green olives
  • 1 cup black olives
  • 1 red pepper
  • 6-7 green peppers
  • 4-5 sprigs of parsley, mint, basil, dill
  • 5-6 small radishes
  • 1 lemon zest
  • 3 cups of water
  • 2 tablespoons lemon juice
  • ½ cup extra virgin olive oil
  • Salt, black pepper
  • Fresh grapes

Preparation:

Put the bulgur and barley noodles in water with a pinch of salt. Cook for 15 minutes until the water is absorbed. Remove from the heat. Add olive oil, lemon juice, lemon rind, and black pepper. Stir and let it cool. Peel the radishes and divide them without separating them. Leave them in a bowl of cold water for 15-20 minutes. Cut the tomatoes, cheese, and peppers into cubes. Remove the pits from the olives and roughly chop them. Finally, finely chop the onions and greens and add all the ingredients to the bulgur and vermicelli. Place on a serving plate, garnish with radishes and grapes, and serve. Bon Appetit!
